DAIKANYAMA OGAWAKEN

My cooking is simple. 80% ingredients, 20% technique. Tadatsura Ogawa

DAIKANYAMA OGAWAKEN

The restaurant was founded by Tetsugoro Ogawa, grandfather of the current chef and owner, as a Yoshoku (Western-style cuisine) restaurant in Shiodome, Tokyo in 1905. After moving to Shinbashi in 1907, Ogawaken became renowned for its stews, beefsteak, and curry - dishes referred to as "Yokohama Western Food." The son, Jun Ogawa, took over the kitchen and evolved the cooking style into authentic French cuisine. The now famous Fujiwara steak, small dishes, and the Raisinwich cookie were all conceived during this time. The restaurant finally moved to its current location in Daikayama in 1964. Third generation Owner-Chef Tadatsura Ogawa has been in charge of manning the kitchen since 1970. This year his restaurant celebrates its 115th anniversary.

PHILOSOPHY

  • "In cooking, there is only one thing.
It's either delicious or it's not.
This is for the customer to decide."

    Tadatsura Ogawa

  • "When I cook, I always assume
    my guests will have
    a discerning palate.
    This means doing my best
every single time I prepare a dish.
If there is a 100-year old secret,
    this may be it."

    Tadatsura Ogawa

  • "In cooking, there is only one thing.

    Tadatsura Ogawa

  • "Your father's a genius,
    but you're an ordinary man.
    Therefore, don't imitate your father.
This is what Kon Toko-san told me."

    Tadatsura Ogawa

  • "Cooking changes;
whether you do it 100 times
    or 1,000 times.
    Even today, after cooking
    the same dish 10,000 times,
    the taste still progresses."
